So one of my first quest is to find the perfect gluten free veggie burger. Even when I ate meat I still loved and craved a good veggie burger, however so many of them had some type of wheat/gluten in them and then the ones I find that don't are just made with beans which usually end up being too spicy or too bland. When I was in San Francisco I did find a fantastic red quinoa and black bean burger at a place called Roam that was delish! So I think I will start with looking for various quinoa recipes that I can maybe convert to a satisfying flavor.
Now Tammy who has partnered up with me on this project and who also has to go gluten free has been craving a gluten free chicken and waffle recipe . So looks like that will also be one of our first recipes. They are so many gluten free flours to choose from for the waffle whether it be more multi grain style or really sweet. Also we will need to decide whether to use a crispy corn flake crust on the chicken or just flour and whether to actually fry it or just "fry" bake it. So there ya go, next week we start the cooking and experimenting process, until then yum yum!
