Straight up I will tell you I do not cook. I wish i did but I have twenty million excuses why I don't and why I prefer to eat out. However lately this has become a real problem for a number of reasons but mostly it narrows down to lack of selection. For one I live in Oklahoma City and while there are a number of great restaurants that have have even achieved national status, when you eat out every day sometimes twice a day you really realize how small this town really is in the food market. The second problem I have is that I am gluten intolerant , only eat certain meats, and totally not a fan of seafood. So considering most of Oklahoma's restaurants are full of fried food, meat, meat , and more meat, and if they have a gluten free dish it is usually seafood , I left with very few choices. Oh and did I mention that every other restaurant is a buffet! They don't call this place cattle town just for the heifers going through the Stockyards and it is easily one of the fattest states in the country.
So what is a gal to do....well I really wanna learn how to cook. At least I keep saying this but don't really follow through much because so far my attempts at cooking have left little for the taste buds! I love food, I mean it is totally one of my favorite activities and really taps that pleasure part of my brain, but I also have reached this point in my life where I am getting older and am tired of felling unhealthy. On top of that after reading way too much info I now have a large paranoia of processed foods, plastics, and even restaurant foods. However my lack of motivation and laziness continue to overcome my paranoia for the convenience of instant satisfaction. NO more I say! now while I can't give it all up at once, i woke up one morning all of a sudden with the drive to start somewhere even f it be baby steps. I went gluten free about for years ago and that was SOOOOOO hard but I did it and recently I gave up carbonated beverages which is huge from a gal who probably drank a two liter or more of soda a day. Now I am down to just water, tea, juice, and occasionally coffee. Now I was a vegetarian for years which was actualy pretty easy since I don't like alot of meats anyway but I realize being gluten free and veggie is very hard so I am settled with the choice to eat some light lean meat occasionally. Okay so I have this drive to got o the farmers market and buy great ingredients and can't wait to eat a healthy tasty meal but alas I have little ability to cook well and oh my gosh there is a great lack of good hearty and tasty gluten free recipes out there. Why is it that just because you can't have gluten in something they think that means take ALL of the tasty out of a meal. I have gone through hundreds and hundreds of recipes and have probably only accumulated maybe 10-20 recipes that seem even somewhat tasty. First you have to get past all the weird ingredients you can't pronouce, then you have to get past the lack of seasoning and flavor. Where are the just old fashion comfort foods that could of just been easily converted to gluten and maybe even meat free. I know they exist yet every cook book has nothing but odd ethnic dishes that are too super spicy to make up for lack of flavor or meals with expensive hard to find ingredients. Now every once in awhile I do find a handy recipe or two but never a book that just gets me and the food choices I love.
With that said I decided to get my two pals that cook well and consistently create dishes for me that I love and create our own useful source for these delicious and healthy mouth pleasers I desire! On top of that I am gonna make them teach me how to cook once and for all. And while I am at it, I am gonna share the experience with you and hopefully find recipes you or anyone might enjoy too and maybe even inspire you to quit making excuses and achieve the healthy eating lifestyle you desire too!
